Position Description:

Assisting the Restaurant Manager in delivering high quality, efficient, individualized and technically excellent dining service in the Dining Room, specialty restaurants and back of house dining in accordance with Company Policies, strictly upholding any Public Health standards and towards a goal of achieving total guest satisfaction.
1. Assists the Restaurant Manager in providing guests with the highest quality food and beverage service by managing and overseeing the food and beverage operation in all dining outlets onboard.
2. Provides on-floor coordination of the guest experience in food and beverage areas.
3. Assists the Restaurant Manager in ensuring that all dining outlets are properly staffed, stocked, set up and open as scheduled.
4. Under the instruction and supervision of the Restaurant Manager prepares an equitable and effective work scheduled for Maître d’ Outlets, Waiters and Service Assistants, issuing on a cruise basis and at least one day in advance.
5. Prepares and maintains a fair In Port Manning schedule for the dining room team on a rotational basis and ensures that it is displayed in an area accessible to all dining room team members.
6. Prepares and maintains on a rotational basis duty sign in sheets for each dining outlet and ensures that they are properly used.
7. Regularly monitors the F&B complaint log and daily outlet logs.
8. Issues daily an end-of-day report to the Restaurant Manager with regards to outlet operations, observations, complaints, defaults and repair request orders issued.
9. Attends and assists with the pre-service staff meetings and ensures that in the absence of the Restaurant Manager all necessary information is properly communicated to all concerned.
10. Maintains a consistent and fair corrective action system.
11. Assists the Restaurant Manager with the organizing and setting up of the Restaurant and Pool area for themed and special event dinners.
12. Ensures with the Maître d ’Outlets the supervision of the food and beverage service during private cocktail parties and special events.
13. Monitors together with the Maître d ’Outlets that the water machines (Culligan system) in all food service areas are properly maintained and filters exchanged as required.
14. Monitors together with the Maître d ’Outlets that the Vitality juice machines and coffee machines in all food service outlets are properly maintained and replenished as needed.
15. Regularly inspects the condition and maintenance of all equipment in the food service areas.
16. Oversees the Maître d ’Outlets rotational on-floor supervision and coordination during guest luggage duties on turnaround day.
17. Adheres to Public Health and Company cleaning and maintenance standards, ensuring that the entire dining room team is properly trained on Public Health standards.
18. In collaboration with the Maître d ’Outlets ensures the logging of all fridge, freezer and dishwasher temperatures in accordance with Company procedures and Public Health standards.
19. Executes strict Public Health practices in all aspects of the position.
20. Ensures the readiness for any announced or unannounced Public Health inspection, whether it’s completed internally or by external authorities.
21. Provides information and consultancy during inspections.
