Your Purpose

The primary responsibility of the Executive Baker is to supervise and manage the onboard Bakery production for alloutlets.

Your Impact

* Ensure that Quality Standards and Procedures are in line with company Rules and Regulations.
* Ensure that bakery personnel is guided and trained to increase productivity.
* Manage the preparation of bakery items that require good professional bakery skills, with help of sous chef Baker.
* Possess good knowledge of the Bakery and an understanding of culinary terms.
* Responsible for the production of bakery goods such as different bread rolls, Danish, breads, croissants, etc.
* Possess knowledge of the various types of grains and flour, gluten-free bread options, and food-related allergies.
* Ensure that menus, recipes, guidelines and methods provided are followed.
* Able to work in any section of the Bakery Department and demonstrate methods and recipes to subordinates.
* Maintain and ensure that Public Health regulations (US, Anvisa, Shipsan, Canadian, Australian, etc.) are followed at all times on board.
* Supervise and monitor the correct application of food safety procedures and food quality requirements related to all processes.
* Produce and maintain the expected level of food quality in the assigned area and according to instructions from the corporate team.
* Maintain quality and consistency in taste, presentation, and appearance, according to recipes and pictures.
* Master bread decorations for the various buffet themes and special occasions as required by the operation.
* Prepare the daily electronic requisitions according to the guest count and forecast figures.
* Communicate to the Procurement Team and Senior Executive Chef, any relevant provision issues on a daily basis.
* Conduct spot-checks and any type of inspections (SMS, PH) as necessary.
* Control and maintain all Bakery equipment distributed to staff, ensuring that it is cleaned and/or sanitized and returned in an acceptable condition after each use.
* Monitor the cleaning, handling, and storage of all Bakery equipment.
* Mentor, develop and provide on-the-job training to subordinates to strengthen current performance and in preparation for future advancement.
* Monitor the training and familiarization of new food crewmembers to their new job and living environment.
* Ensure the recipe-training program is conducted as required, corrected if needed, and communicated to the Senior Executive Chef.
* Maintain cost control within the department/team. Control food production to minimize/avoid waste.
* Ensure that all safety procedures are followed.
* Supervise activities such as. afternoon tea, pool parties, cocktail parties, or special functions where the Bakery Department is involved.

Your Journey So Far

* Advanced Bakery Skills.
* Minimum of 8 years of experience in the field, in a luxury hospitality establishment or upscale cruise line.
* Intermediate knowledge on food safety and Basic knowledge ISO 22000.
* Communicate effectively with the senior management. Possess the ability to lead and make decisions. Good administrative skills. Experienced in coaching subordinates.
* Must be cost and quality conscious.
* Adhere to specific scheduled work hours, yet be flexible if circumstances require it.
* High School education or international equivalent. Bakery School degree
* Knowledge of Microsoft programs to include but not limited to, Outlook, Word, Excel.
* Fluent in oral and written English, knowledge of any other language among Italian, Spanish, French, German, Portuguese is a plus.

* Passport, visas, certificates as specified by the company and as required for exit from the port of origin and entry into the destination cruising area.
* Food Safety/HACCP certificate.

MSC Cruises has grown exponentially since 2003. In such a short time, we have built a fleet of 22 modern and most environmentally advanced ships!

With our constant expansion, our fleet will grow in capacity with the arrival of seven new ships in three different classes by 2027.
One of our latest ships – MSC World Europa – was delivered in 2022, inaugurating the World Class. It is our largest cruise ship to date, with a capacity of over 6,700 passengers, served by more than 2,000 crew members.

In 2023 we inaugurated the MSC Euribia equipped with the best and latest environmental technology and bestowed with a highly-innovative design.

In 2023 MSC Cruises entered the Luxury segment by launching its first of four Explora Journeys ships.

Recruitment Prospects
With three new mega-ships and four Luxury ships to be built and delivered between 2023 and 2027, the biggest and most important challenge for MSC Cruises is to find, recruit and train a high number of new crew members needed to provide the service, fun and safety that have become hallmarks of MSC Cruises.

This massive project is already well under way. The Human Resources Team is not only working to recruit the best talents but is also visiting our manning agencies and hiring partners around the world to ensure that the right people and facilities are in place to prepare this ‘army’ of new crew members for their life at sea.
