As Sous Chef, you will serve as the creative partner and right hand to the Chef de Cuisine, infusing soul, spice, and depth into every dish. Drawing from Indian culinary traditions, you’ll help create a menu that bridges elegant French technique with vibrant Indian flavors — crafting storytelling plates in a unique Provençal setting.
About Us
We're launching Le Rêve de Fusion, a Michelin-minded gastronomic restaurant blending French culinary elegance with the richness of Indian spice, soul and creativity. Located in the iconic La Prévoté, a 17th-century boutique hotel & restaurant in the heart of L’Isle-sur-la-Sorgue, our vision fuses creativity, balance, and storytelling.
We are now building a passionate team to bring this unique gastronomic vision to life.
What You’ll Do
· Co-Create Seasonal Menus: Partner with the Chef de Cuisine to design evolving, refined dishes that marry Indian soul with French precision.
· Lead Indian Culinary Expression: Represent Indian regional techniques and spices to enhance the fusion identity of the restaurant.
· Ensure Quality & Presentation: Supervise mise en place, flavor balance, and plating aesthetics with consistency and care.
· Team & Service Support: Oversee your station, mentor junior chefs, and contribute to seamless service execution.
· Engage with Guests: Participate in Chef’s Table and special guest experiences, narrating dish origins and personalizing flavors.
· Innovate with Purpose: Suggest and test new ideas, especially drawing from your background and seasonal inspirations.
· Inventory Oversight: Assist with spice sourcing, special ingredients, and supplier coordination.

À propos de vous
Profile We’re Looking For
· Minimum 3–5+ years of proven experience in leading roles (Head Chef or Senior Sous Chef) within fine dining restaurants or luxury 5-star hotel kitchens
· Deep knowledge of regional Indian flavors and techniques
· Creativity and openness to collaborative menu development
· Familiarity with French cuisine is a plus (or willingness to learn)
· Team spirit, professionalism, and positive energy
· Fluent in French and/or English
· Valid work authorization in France (visa support possible for exceptional candidates)

La Prévôté – Hôtel Particulier & Restaurant is a historic boutique hotel located in the heart of L'Isle-sur-la-Sorgue, directly on the banks of the scenic Sorgue River. Nestled within a beautifully preserved 17th-century convent, La Prévôté offers five individually designed guest rooms, each decorated in an authentic Provençal style and furnished with period pieces that reflect the charm of the region. Surrounded by the town’s renowned antique shops, galleries, and the stunning Provencal countryside, guests enjoy an idyllic base for hiking, cycling, and exploring the art of living in Provence.
Currently, La Prévôté serves gourmet French and Mediterranean cuisine in its elegant dining room, accompanied by a curated selection of fine wines. Guests also enjoy a charming bar and full access to complimentary Wi-Fi.
Starting October 1st, 2025, we are excited to begin a new chapter as we acquire this exceptional property and launch our new fine dining concept: Le Rêve de Fusion.
The new restaurant will celebrate the meeting of French culinary excellence and Indian spice, soul, and creativity. An evolving seasonal menu will highlight the best of Provence’s local bounty, thoughtfully infused with global influences. For guests seeking a more personalized experience, we will offer Ayurveda-inspired adaptations, allowing dishes to be tailored for balance and well-being — always optional and guided by guest preferences.
