Throughout a rich program of professional training courses, Italian Chef Academy gives its students the possibility to create personal training paths, able to satisfy everyone’s goals. All Italian Chef Academy professional courses and the Advanced Courses have been studied to grant a full preliminary professional preparation to rapidly enter in the world of work.

The education modular training programs consist in: 1) theoretical lessons held in lecture rooms or through our e-learning platform https://elearning.italianchefacademy.it/ (the videos lessons were dubbed in English.for the international students). 2) and practical lessons held in 5 large and modern educational kitchens, which are set up for autonomous cooking stations, equipped with the most advanced technology in order to combine education with technology. Lessons are held by renowned Italian and international chefs, academics and experts in the field.

Who is the course for?

Our courses are designed to meet the learning objectives related to trainees’ future jobs. In particular: · Students receive constant care and attention from the Chef instructor or the Expert; · The class size is of 8/10 participants for the professional chef course and for the professional pastry chef course. This ensures that each student gets one-on-one attention from their chef tutors to really maximize his/her learning potential. · Students are assessed on a weekly basis. They are required to complete multiple choice tests. · Some classes are structured with “role playing and simulation games”; · In each training kitchen, students have their own space and their own equipment, guaranteeing them to work with comfort and efficiency at the highest levels. · Students spend at least 85% of their study time in the kitchen whereby the balance is dedicated to the theoretical lessons such as food cost, food chemistry and physics, food nutrition. · Each student’s work is monitored closely by the chef instructor in-charged to ensure the students get the needed attention and guidance. · The academy provides formal professional training with weekday programs at the academy. Students then complete their education by doing internship in first-rate restaurants and hotels according to the chosen Education Module (i.e. 150 hours; 200 hours; 300 hours; 400 hours or 500 hours). · At the end of the course (before starting their internship), all students attend a practical exam as follows: 1) sanitation, safety and organization skills are monitored at all times for compliance with standard rules (infractions could lead to a failing grade); 2) students must attend the exam with the professional uniform (i.e. chef or pastry chef coat, toque, pant, kitchen safety shoes; apron and towel); 3) students have to prepare the required recipes; 4) the exam time is between 2/3 hours according to the type of recipes (during the time allotted for the exam, students must prepare and exhibit the skills according to industry standards and present the final products to the chef evaluators (usually they are three); 5) safety and sanitation skills, organization, craftsmanship skills, and finished product skills are the assessment criteria. Students who fail the exam cannot start their internship. · Italian Chef Academy is committed to rigorous Quality. In 2013 Italian Chef Academy earned the International Standardization Organization’s certification (ISO 9001:2008) issued by IQNET (the International Certification Network based in Bern, Switzerland), demonstrating its dedication to continuous improvement and superior performance in all aspects of its education system. Below, evidence of the learning outcomes have been enclosed. Tests are collected for each single student. In particular, 1) The file called “Example Tests” put together the weekly tests a student undergoes during the time spent in the Academy and his/her final tests (ie. the theoretical tests (namely the multi choice questions and the essay) and the practical test that consists of: 1 dessert (for the Pastry Chef Student) or 2 dishes (1 pasta dish and 1 meat or fish dish for the Chef Student). 2) The file called “Example Documents for Internship” are the documents that are given to Students for their training period at the Partner Host. It includes the Agreement between the Academy and the Partner Host, the insurance number for the student for the period spend during Internship and the Student Assessment filled by the Chef Host at the end of the training period. The purpose of these internships is to provide meaningful and successful experiences for the students who participate in the internship program. The performance of individual students is then reflected in the final mark.
